oh right i actually have to write this thing to.... so this week i was supposed to be working nights which meant i wanted to make a breakfast piece.. but ehm yeah i ended up working mornings instead and the whole deal went well sideways.. so instead of making the intended brunch like meal i made it a dinner instead...
well here goes... i don't really go for all that conventional stuff for breakfast.. i do sometimes eat my oatmeal but i like mixing it up to.. who says you can't have anything you want for breakfast..?
so here we go.. i really love shrimps and i really really love shrimp salad... thing is though shrimps are kinda expensive so i mostly by them as a special treat.. also shrimp salad.. with all that mayo isn't that healthy.. but it is just so good.. anywho.. doing my vacation i had a croissant with that really fattening shrimp salad.. it was really good btw.. but i couldn't help wondering if it was possible to make a healthier version..
my take on that was to go with a green salad mixed with the shrimps and dressing... originally i wanted eggs in it to but i forgot tho buy those XD
ingredients for one...
a croissant
shrimps
iceberg
cucumber
lowfat cream fraiche (some sour stuff.. you can use yogurt instead)
a tiny bit of mayo (which can be dropped but i wouldn't really recommend it)
dried dill
salt and pepper
lime or lemon
very little sugar
looking at that you might notice that first of i don't use amounts.. well thing is food isn't about amounts but about taste.. for reference though for my evening meal i used a quarter of a small iceberg and like a third of a cucumber and i had a small portion of leftovers... also you might have noticed both the mayo and the sugar.. it's all about the taste and you don't need much... and really we shouldn't be so damn scared of using fat and sugar we do after all need a little bit of the stuff to survive..
anyway... cucumber is chopped into small dices while iceberg is cut really fine... mix cream fraiche and mayo in amounts where starts tasting less sour. Ad salt to help get the taste right.. press lime or lemon into the dressing and ad a very small amount of sugar to help the taste jump out.. ad the dill and just taste taste taste until it is well seasoned... ad the salad, cucumber and dried of shrimps and mix...
cut open your croissant and fill it with the salad... and voila you got a small meal hopefully looking a bit like this
so there we go first meal on this post.. hope you can use it.. to be honest i feel like i'm really crappy at writing recipes and stuff like this.. but hey what's the harm in trying..
